Wine by the Glass
Clement restaurant at The Peninsula New York is the first restaurant in the city to offer every single wine on its extensive list by the glass. Thanks to a new technology called the Coravin System, guests now have the unprecedented ability to select a single glass of wine from any bottle on the entire 25-page menu – without the bottle having to be opened. By inserting a hollow needle through the foil and cork and pressurising the bottle with inert argon gas (to prevent oxidisation), the desired amount can be served – after which the needle is removed, the cork reseals itself, and the bottle is left intact. If that’s not innovation, we don’t know what is.
With hundreds of guests passing through their doors each day, sheets to be washed, food to be prepared, and bathrooms to be cleaned, hotels are renowned for the size of their carbon footprint.
