Here at Black Tomato, we just can’t get enough of sampling local cuisine wherever we travel. Sometimes, we love what we’ve tried so much; we end up finding the recipe and preparing it at home too. And that’s just what we did when we got back from Colombia. Colombian food is hearty and delicious, so to save you the effort of having to find the best dishes, here are our favorites – complete with some tried and tested authentic recipes. Enjoy.
Huevos Revueltos con Tomate y Cebolla
One of the most popular breakfast dishes in Colombia, this simple recipe will transform your boring eggs on toast into a Colombian taste sensation. Utensils ready? Let’s get cooking.
2 x tablespoons of Olive Oil
Chopped Spring Onions
Salt & Pepper
How to make it
Fry those onions and tomatoes in a pan with olive oil whilst you beat the eggs in a bowl with some seasoning. When they’re ready – add to the pan with the onions and tomatoes and stir until cooked. Serve with a slice of toast and, strangely enough, a hot chocolate and you’ve started your day in the Colombian way.
A tasty and filling snack, Arepas are a staple in the Colombian diet and can be found served everywhere from high end restaurants to street side vendors alike. Quick and easy to make, these delicious little pancakes are a must-try.
125 grams of cornmeal
250ml of water
25 grams of parmesan cheese, shredded
50 grams of cheddar cheese, shredded
60 ml of buttermilk
How to Make it
Combine the cornmeal and water in a bowl before adding the cheese and buttermilk. When it’s firm enough, roll the mixture into a ball and flatten into a thick pancake before putting in a dry pan on a low heat. Fry until both sides are golden and serve with a sprinkling of cheese on top. We’re getting hungry just thinking about it.
Quite possibly the most famous of all Colombian dishes, the Bandeja Paisa is a gut-busting challenge, the likes of which you’ve never seen before. Go on, try and finish it, we dare you.
½ pound of beans
½ pound of rice
400 grams of mince meat
Arepas (you should be an expert in making these now)
200 grams of pork scratching
200 grams of sausages
How to Make it
Yet another simple dish to make, you need only cook the rice and fry the rest of the ingredients and you’ve got all you need. Serve with the leftover Arepas from lunch and a slice of Avocado. Let the challenge commence.
